Ingredients

Dry Ingredients:

  • 2 ¼ cups 280g All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Baking powder
  • ½ teaspoon Salt

Wet Ingredients:

  • ¾ cup 170g Unsalted butter, softened
  • 1 cup 200g Brown sugar, packed
  • ½ cup 100g Granulated sugar
  • 1 Large egg
  • 1 Egg yolk
  • 2 teaspoons Pure vanilla extract

Mix-ins & Toppings:

  • ¾ cup 150g Soft caramel candies, chopped
  • ½ cup 85g Caramel chips
  • ½ teaspoon Flaky sea salt for sprinkling

Instructions

Prepare Your Ingredients & Equipment

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  • Bring butter, eggs, and vanilla to room temperature for smooth mixing.
  • Measure and sift the dry ingredients (flour, baking soda, baking powder, and salt) to ensure even distribution.
  • Pro Tip: Using room-temperature ingredients helps the dough mix evenly, preventing overworking and ensuring a soft texture.

Cream the Butter & Sugars

  • In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar on medium speed for 2–3 minutes until light and fluffy.
  • Add the egg, egg yolk, and vanilla extract, mixing until fully incorporated.
  • Why It Works: Creaming butter and sugar properly creates tiny air pockets in the dough, resulting in a lighter, chewier cookie.

Combine the Dry & Wet Ingredients

  • Gradually mix the dry ingredients into the wet mixture, stirring gently to avoid overmixing.
  • Fold in chopped caramel candies and caramel chips using a silicone spatula to evenly distribute them throughout the dough.
  • Pro Tip: Overmixing the dough develops too much gluten, which can make the cookies tough. Mix only until combined.

Chill the Dough (Optional but Recommended!)

  • Cover the dough and refrigerate for at least 30 minutes (or up to 24 hours).
  • Chilling helps the flavors develop and ensures thicker cookies that don’t overspread during baking.
  • Short on time? You can bake immediately, but chilled dough yields a deeper caramelized flavor and a better texture.

Shape & Bake

  • Scoop 2-tablespoon portions of dough and place them 2 inches apart on the prepared baking sheet.
  • Bake for 10–12 minutes, or until the edges are lightly golden but the centers remain slightly soft.
  • Remove from the oven and immediately sprinkle with flaky sea salt to enhance the flavor contrast.
